How Genmac's Hydrauflaker Helped a Commercial Bakery Maximize Space and Boost Productivity

Genmac’s latest blog. Case study on how they helped a commercial bakery maximize space and boost productivity.

As a leading manufacturer of industrial food processing equipment, Genmac is always looking for ways to help our clients streamline their operations and improve their bottom line. One of our success stories comes from a commercial bakery that was struggling with the inefficient handling of large blocks of frozen butter.

The Challenge: Dealing with Frozen Butter Blocks

The bakery in question produced massive amounts of bread and needed to incorporate large quantities of butter into their dough. However, they were facing challenges sourcing refrigerated butter at a consistent, affordable price. As a solution, they turned to purchasing frozen butter in 55-pound bulk blocks.

While this expanded their supply chain options, the frozen butter presented its own set of problems. The large, solid blocks were difficult to melt and incorporate quickly into the bread dough. The traditional approach of thawing the butter out and then manually cutting it into smaller pieces was incredibly time-consuming and messy. It also required a significant amount of valuable floor space to accommodate the scattered butter blocks as they thawed.

The Solution: Genmac's Hydrauflaker

To address these issues, the bakery turned to Genmac and our 2501 Hydrauflaker. This innovative machine is designed to efficiently process frozen food products, including large blocks of butter, by flaking and chipping them into small, manageable pieces.

Rather than the laborious and space-intensive process of thawing and cutting the butter, the bakery was able to simply remove frozen skids of butter from their freezer as needed and run them directly through the Hydrauflaker. The machine quickly transformed the solid blocks into fine, flaky pieces that could be easily and quickly incorporated into the bread dough. While the Hydrauflaker works very well with frozen butter, it was primarily developed as a frozen meat block flaker /chipper.

The Benefits of the Skid-by-Skid Approach

This "skid-by-skid" approach offered several key benefits for the bakery:

Increased Efficiency: By eliminating the need to thaw and manually cut the butter, the bakery was able to significantly reduce processing time and labor costs.

Optimized Space Utilization: Without the scattered butter blocks taking up valuable floor space, the bakery was able to streamline their workflow and maximize the usable area in their production facility.

Improved Safety and Consistency: The Hydrauflaker's automated flaking process provided a safer, more consistent end product compared to the messy manual cutting method.

Expanded Supply Chain: By relying on frozen butter, the bakery was no longer beholden to the availability and pricing fluctuations of refrigerated butter, giving them more flexibility and stability in their operations.

The Hydrauflaker's versatility extends beyond just frozen butter, as it can also be used to process other hard, refrigerated, or room-temperature products like cheese, chocolate, and more. For manufacturers looking to optimize their space, increase efficiency, and enhance their overall operations, the Genmac Hydrauflaker is a game-changing solution worth considering.
